Coconut Cupcakes

Nowadays, it has become fashionable to come to holidays with friends or relatives with edible gifts made by yourself. In order for a delicious present to look worthy, you have to work hard, but what an effect! In the pastry shops there is a huge selection of various paper molds for muffins, and when you see the pastry decor, your eyes just run wide. So, in order to make a beautiful and tasty gift you will need: 6 paper molds with a diameter of 7 centimeters, 6 sugar decorations, a piece of paper (for a box) or a small cardboard box, and, of course, fresh coconut.

From the products listed in the list of ingredients, bake coconut muffins in paper forms, decorate them with a finished decor. Put the sweet treat in a beautiful box and, believe me, your gift will be a hit at the party!

Coconut Muffin Ingredients

  • 80 g of coconut pulp;
  • 75 g of sugar;
  • 75 g butter;
  • 90 g of wheat flour;
  • 50 g of sour cream;
  • 2 g of baking powder of dough or soda;
  • 1 egg
  • 60 g of raisins;
  • almonds, pastry decor.

A method of making muffins with coconut

We pierce fresh coconut with a sharp knife in two places (where the recesses are located) and drain coconut milk from it. Next, you can cut the coconut with a hacksaw, and from the halves of the shell make candlesticks for giving, or insert a sharp knife between the two halves of the shell and divide the nut in half.

Mix butter and sugar in a 1: 1 ratio in a blender until a homogeneous, light yellow cream is obtained. The oil should be at room temperature, slightly softened.

Add wheat flour with baking soda or baking powder to the whipped mass, you can also use self-raising flour.

Put sour cream in the dough, then the egg. Gently mix so that there are no lumps left. Sour cream in this test can be replaced with kefir or yogurt.

Take half the fresh coconut. Remove the brown peel from it, rub it on a fine grater. About half a gram of coconut is about 80 grams of finished pulp. Add coconut and raisins to the dough, mix gently again.

To make cupcakes beautiful, look elegant and festive, be sure to use paper baskets for baking. We fill each basket with 2/3 dough, insert the almond nut into the center of the cake. Paper forms with dough must be placed in metal forms, otherwise the cupcakes will blur when baking.

Preheat the oven to 170 degrees Celsius. Bake muffins with coconut for 30 minutes on a medium shelf. It may take a little less or more time, depending on the characteristics of the oven. Cupcakes need to be taken out when they rise and turn golden brown. Cool them on the grill.

Decorate muffins with coconut finished pastry decor. In just 45 minutes (excluding coconut cutting time), a delicious home-made treat was obtained.
