Sponge roll “Winter's Tale” - a delicious homemade dessert that can be prepared for the holiday or for an ordinary evening tea party. First make a cream and send it to the bottom shelf of the refrigerator - you do not need to cool much. Then turn on the oven to heat to the desired temperature, while it is heating, quickly mix the biscuit dough and send it to the preheated oven. Next, collect the biscuit roll according to the recipe.

Ingredients for Winter Fairy Tale Sponge Cake
- 380 ml of milk or cream;
- 100 g of sugar;
- vanilla extract;
- 70 g semolina;
- 250 g butter;
- a pinch of salt.
For biscuit test:
- 5 chicken eggs;
- 85 g of sugar;
- 60 wheat flour; s;
- 4 g baking powder;
- vegetable oil, salt.
For the filling of the roll:
- 150 g apricot jam;
To decorate biscuit roll:
- 60 g coconut flakes;
- icing sugar, pastry topping.
The method of preparation of biscuit roll "Winter's Tale"
First make cream
Throw a pinch of small salt into milk or cream and pour sugar, put on a stove, slowly heat, stir until sugar dissolves.
Continuing to stir the milk, pour in a thin stream of semolina, if you pour out all the semolina at once, it will turn into a lump. As soon as the porridge thickens, make a very small light and simmer for 5-6 minutes.
We take butter in advance from the refrigerator, cut into small pieces. Cool semolina to 30 degrees Celsius.
Add a few drops of vanilla extract and a couple of cubes of butter to the stewpan. We begin to beat the mass first at slow speeds, then gradually increase the speed of the mixer and at the same time add (one at a time) pieces of oil.
Beat the cream for 5 minutes, transfer to a pastry bag with a nozzle, remove to the refrigerator.
Next, make a sponge cake
Beat eggs, sugar and a pinch of salt in a mixer until the mixture grows about 3 times. The mass will be dense, peaks should not fall from the corollas.
Mix wheat flour with mixed with baking powder, add to a bowl with beaten eggs, knead a homogeneous dough without lumps.
We cover the baking sheet with baking paper, grease the paper with refined vegetable oil (odorless). Pour the dough onto a baking sheet, level it.
Immediately send the baking sheet to the oven heated to 180 degrees Celsius. Bake a biscuit for 9 minutes.
Remove the hot sponge cake on paper from the baking sheet and turn it into a tight roll.
After about 10 minutes, roll the roll, remove the paper. On a table we spread a blank sheet of baking paper, put a biscuit, grease with apricot jam.
Turn the biscuit roll and decorate
We turn the roll, put it on a dark holiday plate or on the board with the seam down. Pour some powdered sugar into a sieve, sprinkle on top - simulate snow. You can’t pour a lot of icing sugar on the dough, the cream does not stick well to the icing.
Squeeze out evenly the cream from the pastry bag - you get a creamy log.
Sprinkle the log with coconut and decorate with confectionery sprinkles. I was not too lazy, I got yellow stars from a multi-colored mass - it turned out stylishly.
We remove the biscuit roll in the refrigerator for several hours.
This biscuit roll is a bit like a classic Christmas log, the principle of cooking is the same, however, a sponge cake in a log is usually soaked in alcoholic syrup.
